Can I make banana bread batter tonight and bake it tomorrow?
Or should I do it all at once?

It is probably too late but you can certainly make the batter tonight then cook it tomorrow. Just make sure it is in the fridge then bring it to room temp before cooking (leave it out while the over pre-heats)

The bananas turn brown (even more than what you need) when you put them in the fridge. I wouldn't leave it overnight.

I wouldn't leave it either - the baking soda/powder or whatever is in there to rise the dough could make it kind of funky over night....
