Can salad substitute for a vegetable?
My parents and mother in law are coming over for dinner tonight and I am so not into cooking today (or ever, but especially today).
I'm making london broil with rice and salad and fresh bread.
I can get away without a vegetable right...or maybe I should just heat up some frozen mixed veggies...I'm so unmotivated for this.

yes...i think that's what i'm going to do. They'll just have to deal. My mother basically coerced me into this dinner anyway.

If you are close to a trader Joes then you can just pick up froazen already done vegetables ..........ex---sauteed asparagus ........... that just pop into the microwave for a few seconds and they are delicious!

Yup - I always consider it a veggie, especially when there are other veggies in the salad.

I definitely don't consider a salad a "veggie".
But it wouldn't bother me too much if I didn't have a veggie at dinner either.
