Can someone please tell me how it is possible...
to grill flank steak pinwheels without all the cheese rolled up inside melting and dripping through the grates?
I like meat when it is grilled - I don't like doing it inside or baking or or on foil - I like to have that grilling char on it - how can I do this with pinwheels!! any ideas?!?!?!?1

LOL probably. I would have suggested foil, but you don't want to do that. We tried cooking it right on the BBQ like that once and we had the same problem.

Have you tried less cheese and keeping it away from the edges a bit? Or what about searing the ends in a really hot pan for a minute to seal the ends then throwing it on the grill?

I was going to suggest searing the outside quickly and not overfilling the center...
Also, people recommend always flipping with a wide spatula as opposed to tongs, you lose less filling!

OMG we just bought these pinwheels for the first time at Uncle Gisseppes and I was wondering the same thing!! We haven't cooked them yet.
eta: i wonder if we'd have to cook them in the broiler instead??
