Can we please talk about shrimp and/or salmon?
DH & I have never really been big fish eaters but I want to start incorporating it into our meals on occasion.
What is your favorite way to eat it/ cook shrimp and/or salmon?
We don't have a bbq.

EASIEST salmon recipe!
Are you cooking for 2?
If so,
Preheat oven to 450.
Take 1-2 slice of whole wheat bread (sandwich bread), a handful of flat-leaf parsley, and a splash of EVOO and put that into your mini prep.
Season 2 pieces salmon with salt and pepper, then spread dijon mustard on top. Put half of breadcrumb mixture on top of each salmon so that it coats the top, and press down a bit so it sticks on.
Roast for about 10-12 minutes. DONE :)
OR
Preheat broiler.
Season 2 salmon fillets with salt and pepper and place on baking sheet lined with foil. Sprinkle chili powder on top of the salmon pieces. Slice up a few zucchinis into spears and place around the salmon pieces. Drizzle EVOO and sprinkle s&p on the zucchini. Broil 8-10 minutes.
Meanwhile, heat some oil and add a package of frozen corn. Saute until it starts to brown. Add a container of fresh salsa (like pico de gallo) and some sliced scallions.
When salmon is finished, you can top it with the corn mixture and serve the zucchini as a side.

For shrimp...
I LOVE this shrimp scampi recipe from Allrecipes.com. You can prep the dish in the 6 minutes that the oven takes to preheat!
Preheat the oven to 450.
Take a stick of butter (1/2 cup), a tbsp of djon mustard, juice from 1/2 lemon, 3 cloves chopped garlic, & handful of chopped flat-leaf parsley and heat in small saucepan over medium just until the butter melts.
Put 1 lb of shrimp (raw, peeled & deveined) and place into shallow baking dish (I use my pampered chef stoneware) and pour the butter mixture over the shrimp.
Bake for 12-15 minutes until shrimp are nicely pink and opaque.
SO DELICIOUS!
Ina Garten's baked shrimp scampi is really good too...
and for more salmon recipes... Giada has some good foil packet salmon recipes that are super simple!
You should check out food network for those!

You can really use anything... you just don't want the flavor to be TOO strong - KWIM? You just want something so the breadcrumbs will stick to the salmon!

You can marinate the salmon and just pan fry/grill it.
For shrimp - just cook some off in some garlic oil and top a salad.

Salmon-add lemon, garlic, little bit of salt and pepper and EVOO, bake for ~15mins. Its easy and yummy
I usually just do a shrimp scampi-EVOO, garlic and salt. you can add it to pasta or salad

I bake raw shrimp (peeled & deveined) with a little white wine, lemon, salt/pepper & olive oil. I make a breadcrumb topping with fine chopped garlic, onion, panko (japanese bread crumb), parsley, some butter & season. I bake it at like 350 for 20 mins, sometimes I broil it like 2 mins to make the breadcrumb topping crispier.
I usually just put salmon over a greek salad. I have a fancier recipe with dill, mustard & then wrap in store bought pastry dough. It's baked & great for a special brunch.
