APPETIZER BREAD
2 c. grated Italian mix shredded cheese (Sargento 4 cheese) 1 c. low fat mayonnaise 1 tsp. Italian herb seasoning 1 bunch green onions, finely chopped 1 long loaf French bread, halved lengthwise A Handful of Parmesan cheese
Directions Chop onion Combine cheese, mayo, herb seasoning and green onion. Mix thoroughly - this can be done ahead and refrigerated until close to time to bake. Spread mixture evenly on bread halves and sprinkle generously with Parmesan. Place bread on large cookie sheet. Bake, uncovered at 350 degrees for 20 minutes or until bubbly. Remove bread from oven and slice into 2" pieces. Serve immediately. Makes 24 pieces.
This is a great 'fashionable' appetizer and sooo easy
Endive Leaves Ingredients 1 head endive 1 cup of blue cheese, crumbled 1/2 cup spiced nuts, chopped 3 tablespoons honey
Preparation Slice off the base of the endive and separate the endive leaves, carefully pulling them off at the base so they're intact.
Fill the base of each leaf (the strongest and whitest part) with a heaping teaspoon of blue cheese crumbles. Sprinkle each with nuts and top with a drop or two of honey.
* you can substitute goat cheese if you like instead.

I would do a nice big antipasta platter like you mentioned-
but make that the main dish....
different italian meats, cheeses, olives roasted peppers, etc
On the side Id do a crudite platter w/a dip (when Im having just the girls over this is what they eat the most of!)
Id also do all the other apps you mentioned,
but if you make the antipasta platter the main dish- at least you know your guests can fill up on this...
( I hate having a party and being nervous that people might leave hungry)
or if they drink a little too much, you need some "heavy" food to soak up the alcohol!

Being that the party is to "kick off" the summer, Id also do a white& Red sangria, and maybe a pitcher of Mohitos!
you can cheat and go to costco & get the frozen appertizers that you heat up in the oven, there are potato puffs, mini eggrolls, mini pigs in the blanket,mini crabcakes......... put on a large platter & serve w/homemde honey mustard dip.
Ive also done caprese sticks:
Using a small decorative cocktail skewer or bamboo stick,
skewer 1 tomato half, 1 basil leaf, and 1 bocconcini (mini-mozzerella ball) half onto each, in kabob-fashion, with the basil leaf sandwiched between the mozzarella and tomato halves and the cut side of both tomato and mozzarella facing each other.
Repeat until the stick is full. Arrange on a small serving platter & set aside.
In a bowl of a blender or food processor, combine 1/4 cup chopped pitted kalamata olives 1/2 cup extra-virgin olive oil 1/4 teaspoon minced garlic 1/4 teaspoon crushed red pepper 2 tablespoons minced fresh oregano 1/4 teaspoon
Drizzle the olive mixture over the tomato-mozzarella skewers. Sprinkle the entire platter with kosher salt, then serve!
