Can you guys give me some ideas on what to make for DH for dinner..this is going to be challenging!
So DH wants to loose 20lbs and I want to loose 8lbs. The problem is he is very picky when itcomes to food. Right before we met he did loose 80lbs then another 15lbs the first year we were together. But his diet was so strict and it is something that I would get bored of. So this is what he won't eat: Soup, most veggies(he does like acorn squash, string beans, asapragus, brocolli, cauliflower, eggplant(as in eggplant parm), zucchine (fried only), peas and carrots.
So does anyone have any meals they would like to share.

Does he like mushrooms? I make an easy roasted veggie pasta with roasted asparagus and roasted mushrooms, angel hair pasta, grilled chicken, balsamic vinegar and sprinkle of cheese... it's good and its quick, because you use those precooked/pregrilled chicken slices that you just heat up.
Let me know if you're interested, I can send the recipe tonight from home.

You could make eggplant parm but bake the eggplant instead of frying it and use lower fat cheese. Will he do chili or does that count as soup? Chili is healthy and lower fat if you use low fat meat. You can make stir fry with the veggies that he does like. Baked potatoes and a lean meat are great and just make a veggie he does like. Grilled chicken over salad (does he eat any kind of lettuce?) How about breakfast for dinner? Egg white omlette with some whole grain toast?

Pasta with Grilled Chicken and Asparagus from Cooking Light Superfast Suppers
1 pound asparagus 1 - 8oz package presliced mushrooms cooking spray 1 - 9oz package refrigerated angel hair pasta 2 - 6oz packages grilled chicken strips 2 tablespoons olive oil 2 tablespoons hot water 3 tablespoons balsamic vinegar 1/2 teaspoon pepper 1/2 cup preshredded fresh parmesan cheese
Preheat oven to 450 degrees. Snap off tough ends of asparagus and cut asparagus into 2 inch pieces. Arrange asparagus, mushrooms in a single layer on a broiler pan coated with cooking spray. Bake at 450 for 8 to 10 minutes or until golden brown, stirring once.
Cook pasta according to package directions, omitting salt and fat. Drain, reserving 3 tablespoons of pasta water. Add roasted vegetables, reserved pasta water and chicken to pasta and toss gently.
Combine olive oil, 2 tablespoons hot water, balsamic vinegar and pepper; stir well with a whisk. Add to pasta mixture, and toss well. Sprinkle with cheese and serve immediately.
Yield 5 servings (serving size 2 cups)
Calories 401 (25% from fat); Fat 11.2 (saturated 3.1g); protein 28.4g, carbs 47.5g; fiber 4.1g; sodium 771mg.
------ We've never used the precooked refrigerated pasta, we'll just use a dry boxed pasta. I think they just recommend that type because it cooks quicker. We also use the Perdue grilled chicken strips, we'll get a bag from costco and use it for lunch and this meal.

tonight we made turkey tacos (minus the taco shell) with fat free cheese. Home made guac. and tomatoes on top.
I also made whole wheat fat free baked ziti often (you can also make lasagna like this)
WW chili is great, grilled ANYTHING is good, does he eat fish? I love fish it's so easy to make and always tastey.

thanks everyone. He does eat fish and meat and chicken. I do make turkey taco's. He does like lettuce and baby spiniach (only raw). Chili he might eat as long as their were no beans. I am just tired of making the same things over and over. I will try the stir fry idea. He might eat eggs for dinner, I have to try that one too. Now I know were my son get's his eating habits
