Can you please share your favorite go-to vegetarian/non meat dishes?

I feel like I do a lot of my cooking with meat, it seems simplest for me, but I am looking to eliminate having so much meat in our families diet and need some ideas for meat-free meals, especially for my DD.

Im not a big cook so simple -one dish type stuff is right up my alley!

Can you share your favorites?

Easiest ever:

Heat up lentils from Trader, spoon em into a warm tortilla with hummus, onions, salsa, jalapeño! Mmmmmm i make it like 4 nights a week never gets boring for a veggie!

Sometimes I do a broccoli, mushroom and white bean casserole. I mix with black pepper reduced fat olive oil mayo, non fat greek yogurt, 1 egg and fat free cheddar cheese and broken up noodles from a ramen packet (not the flavor pack though, pure salt). Tastes pretty good. It's a variation on this Alton Brown Recipe .

Whenever I want a dish without meat, I usually sub it for beans and it works really well, especially with tacos or taco salads.

Sometimes I buy the veggie stir fry mix (the fresh bag of veggies in the produce section) and I saute that up and stuff into a whole wheat pita.

Black bean quesadilla. Spinach combined with mozarella and tomato sauce over penne.
