In my experience, and I have three houses: Catmint varieties - deer never touch them. Gaura (perennial flower) lovely tall waving stems with delicate flowers on them all summer. Geranium - not the annual flower that comes in a pot, the perennial plant that blooms in June and that has lovely smelling leaves which deer dislike. It makes a great ground cover as well. Soooo easy to grow and divide and spread around. Daffodils - they won't touch them.
They don't like plants that smell strongly, so if you can brush your hand over the leaves of something and it leaves a smell, deer probably won't like it.
I have been using Deer Scram deer repellant successfully for the past two years. It's expensive, but I have found it works well. It's made of dried ground meat and blood. I can hardly smell it, but they sure can.
