Cauliflower Crust

Has anyone made a Cauliflower Crust for Pizza?

If so, what recipe did you use?

I did and it was an ABSOLUTE disaster.
Never again.
Mushy, crumbly, we basically had to eat it with a spoon.
No way would it have held up to hold it in your hand like real pizza.
HUGE fail.
And so much work and effort for a horrendous result

I tried it once a long time ago and it was okay. I don't remember what recipe I used but I looked at a bunch. I mostly remember that there was so much cheese in the crust that it didn't feel healthy at all.

However, I just came across this recipe for stromboli the other day and tried it out. It wasn't crispy like I'd hoped but it was still good. I would try it again and see if I can get the cauliflower any drier to see if that helps. I also forgot to cut vents so I'm sure that didn't help. But with the yummy filings I didn't really care that the crust wasn't great! I did one with ham and pepperoni and one with spinach, broccoli, and ricotta. I didn't use a ton of mozzarella to make up for what's in the crust. I'm pretty sure the site has a recipe for pizza too.

I did it when I was on medifast and I really liked it, maybe because I didn't have pizza for a long time but even my husband liked it.

I would have liked it fine if it wasn't such a disastrous mess when done. I don't think cauliflower is meant to be a 'crust' for anything. Mashed potato substitute, yes. pizza crust, it's a stretch. The water content on that vege is too high to hold a proper form. The texture is just not right.

Sadly this was my experience too. I had such high hopes. It went in the garbage Chat Icon. I'm sure I didn't get enough moisture out or something. The texture was gross. I love mashed cauliflower but this was just bad.

You have to squeeze all the water out and need a cheese cloth for it to really work. Also the edges will get burnt if you want the center to be cooked. It needs to be spread super thin also. I love it. It took a few times for me to perfect it.

Oh and it must be fresh cauliflower

I've never tried it, but I've heard using a juicer to get the water out of it works awesome. Just make sure the area that holds the pulp is nice and clean before doing it. Everything I've read online says it's the best way to get it nice and crispy.

This is such a great idea, thank you for the suggestion! DH got a juicer for his birthday and uses it constantly. We'll have to use it for this.

we made this many times and through much trial and error we realized that adding some almond meal or almond flour to it got it to be much more sturdy..and it was delish..

also..getting all the water from the cauliflower out is so key..
