Cheese Fondue Recipe

I just got a fondue maker for Christmas. I want to make a yummy fondue dip. Any recipe suggestions - no swiss cheese please?

ok, I'll start off..... I hate to say it, I'm going to give you the classic recipe... yep, it calls for emmenthaler (aka 'swiss') and gruyere. you can substitute another meltable white cheese.... maybe gouda?

It's pivotal that you get good (cheese shop) cheese, and grate it yourself. Don't use stuff from the dairy isle, unless it's crackerbarrel blocks.

8 oz emmenthaler -grated
8 oz gruyere - grated
1.5 cups white wine
garlic clove-smashed

In a ceramic (microwave safe) bowl, smear the garlic on the inside of the bowl, then discard garlic. Add wine and nuke for about 30s until hot. Add 1/4 of the cheese, stir, and nuke another 30s. Stir and nuke in 15s increments until cheese is melted. Add another 1/4 of the cheese and nuke / stir in 15s increments. When cheese is melted, stir in third batch of cheese. Repeat nuke/stir process until everything is added and melted.

serve with chunks of french bread (day old is preferable, so it doesn't fall off of the fondue forks)

I make this dish more regularly than I should admit to.......

I do one that is a cheddar/beer fondue but add in some swiss, it does alot for the flavor however doesnt taste like swiss at all....

sorry that all of the measurements are approx, I tend to just dump them in...i eat this ALL the time!

2/3 bottle of beer
8 ounces swiss cheese, shredded
4 ounces sharp cheddar cheese, shredded
Tabasco to taste start with approx a tablespoon but personally i tend to add a bit more.
Garlic to taste, start with approx the equiv. of 2 chopped cloves but personally I like a lot!)
flour

Mix cheeses with flour. (usually I coat the cheese with the flour by buying already shredded cheese and just dumping flour into it and shaking it up until it is coated--this step is important--this helps it to melt the cheese evenly)

Heat beer in fondue pot until steaming. Add Garlic and stir/let cook about a minute

Add cheese a handful at a time and stir until melted.

Add Tabasco, keep mixing!

Dip Chunks of crusty bread into cheese and enjoy

ETA: which fondue pot do you have? If you have the electric one (cuisinart (sp) i think) you can actually cook it in there, however many times the ones that heat with sterno dont actually get hot enough to melt the cheese so it is best to make it on the stove and then transfer it to the fondue pot to STAY warm
