I need a healthy recipe for tonight's dinner. No crockpot since I am not home to do that. Any ideas?

Chicken breast recipe

I make baked lemon chicken. Sooooooo good.
In roasting pan, place the breasts, large chopped onion, 4 chopped garlic cloves, onion/garlic powder, salt pepper, a lot of of oregano, the juice of 2 lemons and a sprinkle of EVOO. Coat everything.
Cover with fool and bake for an hour. The last 5/10 mins turn on high broil to crisp up.
Serve over rice. It's so delicious and easy

I made this couple of nights ago. without the lemon because I didn't have any. Chopped up garlic, fresh parsley, salt, pepper, thyme, oregno, pour in some olive oil and smear all over the chicken. Let is sit for 10 mins, shove it oven. While that was cooking, made some couscous, and whipped up a cucumber salad. Everything was on the table in like 30 to 40 mins.. and super delish Chat Icon

She doesn't specify in the recipe. I just use enough for me and DH. 2 servings or whatever.
I just eyeball it.

I made this tonight and it was sooooo yummy! I'm going to try it out with shrimp next. I like a lot of sauce, so I used 1/2 cup of pasta water to add more liquid. Worked great!

I always go with a little less than it calls for- and it's plenty.

I made this tonight - delicious!! I used half the butter and added some fresh lemon juice. Definitely adding this to my rotation and it would also be an easy but good dish for company.

Re: Chicken breast recipe

I made it today, a half trays worth and added chicken broth for more sauce, a tablespoon of flour to thicken it up a bit and chopped artichoke. It was delicious! I like the idea of adding sundries tomatoes. I also used farafelle barilla pasta.

Sprinkle salt, pepper, garlic powder on chicken. Let sit.
In pan, add olive oil.
Cook the chicken, flipping both sides.
When it starts to brown a little, add a little broth to create a roux.
Take out.
Put in an oven proof dish and add salsa.
Cook in oven for about 10 minutes.
Take out and sprinkle shredded cheddar over the salsa.
Put back in the oven and cook for a few minutes till the cheese melts.
Serve with rice and beans.

No, I use in the bone & keep skin on, it's much more moist that way. If you use boneless and skinless Breast, is say 40 mins or so, but it will be dry.

I made this the other night. HUGE hit! I just wish it had more sauce...I have to figure out a way to make more, maybe double the garlic and tomatoes and add some broth...it had so much flavor thoug. Thanks NervousNell!
