Chicken breast recipes!
I have SO much chicken in my freezer (I have about 4lbs of the purdue thin slices chicken breast).
Please give me some ideas what I can do with it next week!! I'm going food shopping this weekend so there are no limitations for ingredients- as long as it is a chicken recipe!

I made the pesto chicken recipe that TZ0624 suggested a few months back
She had detailed it out better but it was basically layer pesto on the chicken breast and sprinkle mozzarella cheese and bake. It was really deelish. I think we ate it with some steamed veggies.

Bisquick Ultimate Chicken Fingers:
2/3 cup Bisquick Heart Smart® mix 1/2 cup grated reduced-fat Parmesan cheese 1/2 teaspoon salt or garlic salt 1/2 teaspoon paprika 3 boneless skinless chicken breasts, cut crosswise into 1/2-inch strips 1/4 cup fat-free egg product 3 tablespoons 40% vegetable oil spread, melted
Heat oven to 450°F. Line cookie sheet with foil; spray with cooking spray. In 1-gallon resealable food-storage plastic bag, stir together Bisquick® mix, cheese, salt and paprika. Dip half the chicken strips into egg product; place in bag of Bisquick mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat with remaining chicken. Drizzle vegetable oil spread over chicken. Bake 12 to 14 minutes, turning after 6 minutes with pancake turner, until no longer pink in center. Makes 4 servings

I love pesto chicken topped with tomatos and scalions in a balsamic vinagrette.
Chicken and dumplings
Honey mustard chicken cutlets. (instead of egg I used honey mustard and then used panko spiced up with paprika and dry mustard.

I like to drench the chicken in lemon juice and then coat it with italian breadcrumbs and parm cheese.

Chicken Gnocchi soup (recently posted)
Chicken, cream of mushroom soup, rice
Grind up some pretzels and use as breadcrumbs (DS had fun making this)
Reynold's Foil had some good recipes for chicken packets. (my new fav website)
chicken salsa, corn, black beans/refried beans, rice, corn, cheese, taco shells.... make a mexican lasgana
cook some in sauce (tomatoes) - add a little sausage for flavor... make a pot a sauce w/ sausage/ chicken/ meat balls...
chicken cordon blue - place thin cutlet down, put one piece ham, one piece swiss, fold in 1/3, put a little dijon mustard as "glue", fold other 1/3, more mustard, roll in breadcrumbs, bake seem side down.

CROCK POT SMOTHERED BUTTERMILK CHICKEN
1 lb. Boneless Skinless Chicken Breasts 3 medium carrots, sliced 1/3 c. onion, chopped ½ c. water 2 T. light butter or margarine ¼ t. salt ¼ t. pepper 1 bay leaf 1 pkg. roasted chicken gravy mix 1/3 c. buttermilk 2 t. flour 1 c. frozen peas
In a 4-6 quart crock pot, combine chicken, carrots, onion, water, butter, salt, pepper, and bay leaf. Mix well.
Cover. Cook on low 6-8 hours or on high 3-4 hours.
About 20 minutes before serving, stir gravy mix into crock pot. Remove and discard bay leaf.
In a measuring cup, blend buttermilk and flour until smooth. Stir flour mixture and peas into crock pot. Mix well.
Cover, increase heat to high. Cook an additional 20-25 minutes or until peas are cooked.
***Serve with rice, biscuits, or mashed potatoes for additional points.
CROCK POT CHICKEN STROGANOFF
6 4-oz. Boneless Skinless Chicken Breasts 1 can FF cream of chicken soup 16 oz. FF sour cream 1 (1 oz) envelope dry onion soup mix
Spray crock pot with Pam.
Place chicken in bottom of slow cooker.
Combine soup, sour cream and onion soup mix. Pour over chicken.
Cook on low 6-7 hours.
Serve over rice or noodles for additional points
CROCK POT GARLIC CHICKEN
16 oz. Boneless Skinless Chicken Breasts 1 t. salt 2 t. paprika 2 t. lemon pepper 1 large onion, sliced 10 cloves garlic (about 1 medium bulb), unpeeled
Mix together salt, pepper and paprika. Rub over both sides of chicken.
Place onion in slow cooker. Place chicken breast on top of onion.
Place garlic on chicken.
Cover and cook on low for 4-6 hours or until juices run clear.
CROCK POT BARBECUED CHICKEN BREASTS
8 Boneless Skinless Chicken Breasts 1 can (8 oz.) low-sodium tomato sauce 1 can (8 oz.) water 2 T. brown sugar 2 T. prepared mustard 2 T. Worcestershire sauce ¼ c. cider vinegar ½ t. salt ¼ t. pepper Dash of garlic powder Dash of oregano 3 T. onion, chopped
Spray inside of crock pot with Pam.
Place chicken in crock pot, overlapping as little as possible.
Combine remaining ingredients. Pour over chicken.
Cover. Cook on low 6-8 hours or on high 3-4 hours.
***To thicken the sauce a bit, remove the lid during the last hour of cooking.

1 can FF cream of chicken soup 1 pkg. dry onion soup mix 1 c. long grain rice, uncooked 6 oz. boneless, skinless chicken breast tenders ¼ t. black pepper
Combine all ingredients in slow cooker.
Cook on low 5-6 hours.
Stir occasionally.
CROCK POT CHICKEN JAMBALAYA
1 lb. boneless, skinless chicken breast , uncooked, cubed 3 c. FF chicken broth ¾ c. water 1-1/2 c. uncooked brown rice 4 oz. RF smoked turkey sausage, diced ½ c. celery, thinly sliced ½ c. onion, chopped ½ c. green pepper, chopped 2 t. Cajun seasoning 2 garlic cloves, minced 1/8 t. hot pepper sauce, optional 1 bay leaf 1 can (14-1/2 oz.) no-salt diced tomatoes, undrained
In a large nonstick skillet, sauté chicken 2-3 minutes.
Stir together remaining ingredients in slow cooker.
Add sautéed chicken.
Cover. Cook on high 6 hours.
CROCK POT CHICKEN AND DUMPLINGS
1 lb. boneless, skinless chicken breast , cubed 2 cans FF cream of chicken soup ¼ c. onion, finely diced 2-1/2 c. water 1 can (7.5 oz) Pillsbury buttermilk biscuits 1 chicken bouillon cube 1 lb. red potatoes ½ lb. Carrots
Combine all ingredients except biscuits in slow cooker.
Cover and cook on low 5-6 hours.
30 minutes before serving, tear each biscuit into 4 pieces.
Add to crock pot; stir gently.
Turn crock pot setting to high. Cook an additional 30 minutes or until biscuits are fluffed up and cooked through.
CROCK POT CHICKEN & RANCH POTATOES
20 oz. potatoes, peeled and cut into small cubes ½ pkg. dry ranch salad dressing mix 1 lb. boneless, skinless chicken breast, cubed 1 can FF cream of chicken soup ¼ c. FF sour cream ¼ c. onion, finely chopped Salt and pepper to taste
Spray slow cooker with Pam.
Mix all ingredients and place in crock pot.
Cook on low 6-8 hours or on high 4-6 hours.
CROCK POT CREAMY CHICKEN & RED POTATOES
20 oz. red potatoes, chunked 8 oz. FF cream cheese 1 can cream of potato soup 1 pkg. Hidden Valley dry ranch mix 12 oz. boneless, skinless chicken breast, cut into strips
Place potatoes in crock pot.
In bowl, beat together cream cheese, soup, and ranch dressing mix.
Stir in chicken.
Cover and cook on low 8 hours, or until potatoes are tender.
If possible, stir once after 5-6 hours.
Stir well before serving.

Chicken Fried Rice
I used boil-in-a-bag brown rice and cooked that.
While that was cooking, I scrambled 2 eggs and 2 egg whites in a skillet. Removed from pan. Then sauteed up some chicken and onions. Once those were cooked through, I put the eggs back in and added a can of peas and carrots, then the cooked brown rice, then some soy sauce. YUM.

CRUSTED HONEY MUSTARD CHICKEN
2/3 c. RF or FF honey mustard dressing 1/8 t. salt 1/8 t. pepper 2 t. dill 1 medium scallion, thinly sliced 1 c. cornflake crumbs 4 4-oz. BSCB
Preheat oven to 425.
Spray shallow baking pan with Pam.
In a small bowl, combine honey mustard dressing, salt, pepper, dill, and scallions. Remove 1/3 cup and set aside.
Place corn flake crumbs in a shallow bowl.
Dip chicken breasts into dressing mixture, then into corn flake crumbs.
Place on baking dish and bake about 15 minutes, or until chicken is golden and no longer pink.
Drizzle reserved 1/3 honey dressing mixture over chicken and serve.

CRUNCHY RANCH CHICKEN
1/3 c. corn flake crumbs ¼ c. RF Parmesan cheese 1 packet (1 0z) Hidden Valley Ranch Dressing Mix 4 BSCB
Preheat oven to 350.
Spray a 9"x13" baking dish with Pam.
Combine crumbs, cheese, and dressing mix.
Spray chicken with butter-flavored Pam.
Roll in corn flake mixture to coat.
Place chicken in pan and bake 45 minutes or until done.

In a small bowl put 2 tablespoons of flour, a tablespoon of salt and a half tablespoon of pepper. Sprinkle mixture on both sides of chicken. You don't have to coat it.
Heat a little oil and in a skillet and when it is SCREAMING hot add 2 tablespoons of chicken and then you can put the cutlets in just to quickly brown them on both sides.
Take chicken out, reduce heat and add 1 cup of white wine, a chopped up clove of garlic and a couple of sprigs of fresh thyme. Heat for about 5 minutes until it reduces down to about half a cup of liquid. Put the cutlets back in and put in oven at 350 until cooked through. For the big fat cutlets I have it's about 15 minutes.. for thin ones I would probably only do a few minutes.
Spoon pan jus over chicken when serving.
