I've tried it and it never seems to come out the way I think it should.
I took our chicken as well, was going to just roast but can use ideas as well!!

Chicken Breasts
Throw chicken cutlets into a crock pot with a bag of frozen corn, 1 can black beans, 1 can red beans, 1 large onion, 1 jar roasted red peppers, 1 can diced tomatoes, and 1 jar of salsa. Season with salt, pepper, garlic powder, and any other spices. When you are ready to eat, shred the chicken. Put into tortillas or on top of rice. Top with avocado if so desired.

My favorite and simple go to chicken dish is:
Grill chicken (brush with evoo and season with s&p and a tiny bit of Italian seasoning)
Once almost finished spread a tablespoon of goat cheese (variation: use feta rather than goat and use Greek seasoning rather than Italian) on top of chicken and top with a few sundried tomatoes.
I also do a similar dish, grilled chicken caprese...made the same way but I top with fresh mozz and fresh tomato's and a little balsamic glaze.

I do a lot of "rollatini" too....all different kinds. I pretty much get creative with what I have on hand.
I dont have a recipe but the concept is simple..
Pound out cutlets, season with s&p, brush with evoo and whatever seasonings you like, stuff / roll cutlets with various flavors/ingredients you like....secure with tooth pick and bake at 375 until done. Some I've made in the past:
Pepperoni and mozzella (you can cook in tomato sauce if you want) Broccoli, breadcrumbs and cheddar (mix with a little sour cream or cream cheese for moisture) Prosciutto and provolone (you can cook in a little vodka sauce if you want) Pesto and fresh mozz Spinach with mozz and feta

Something I've been doing-just to add some different flavors in general-is buying one new spice that I've never tried before each time I go to the grocery store. Then, I base the meal around the flavors in that.

Thus is a new one in my rotation. My youngest DS doesn't love it, but the rest of us do.

I made the smothered chicken tonight! Yummy and decadent! Instead of baking the chicken cutlets, I dredged them in flour and cooked them in butter an oil in a pan (as if it needed more butter an oil haha!) I also added lots of crushed red pepper to the spinach. I served it with rice and peas.
