Chicken Milano
I got this recipe off the back of the Progresso Panko Bread Crumbs box. I am trying it tonight I am cutting up the chicken in slices though and mixing it in with the salad.
Dressing 1 tbsp olive oil 2 tsp red wine vinegar 1/8 tsp salt
Salad 1 cup tightly packed arugula leaves 1/2 cup diced tomatoes 2 tbsp diced red onion
Chicken 2 tbsp flour 1 cup Progresso Italian style panko bread crumbs 1 egg 4 boneless chicken breasts 2 tbsp olive oil 1/4 cup crumbled tomato-basil feta cheese (I am using regular feta cheese)
1) In medium bowl, mix dressing ingredients. Stir in salad ingredients to coat.
2) On separate plates, place flour and bread crumbs. In bowl, beat eggs with fork. Coat chicken with flour. Dip into egg; coat well with bread crumbs.
3) In 12-in non-stick skillet, heat 2 tbsp oil over medium heat. Add chicken. Cook 8 to 10 min. turning once until juice of chicken is clear when center of thicken part is cut (170 deg F) and coating is golden brown. Serve chicken topped with salad and sprinkled with cheese.

I just added this to my notebook... it sounds sooooooooo good and easy to make.

I made this the other night but wasnt crazy about the dressing. It was very bland. I used italian dressing instead and it was fabulous!
