CHOPPED - LIF edition JUNE
tonight's original dinner is a no-go because we're out of chicken breast.
I'm defrosting chicken thighs & drumsticks.
Ingredients on hand:
-regular pantry items -broccoli -greek yogurt -cherry tomatoes -bocconcini -some fresh herbs (rosemary, basil, oregano) -gummi bears (just kidding!) -regular fridge/counter staples (lemon, garlic, onion, balasmic vinegar, mustard, rice, etc.)
unlike the show Chopped, you don't need to use all of the ingredients!
any ideas?
So far I'm planning on slicing lemons and putting them in bottom of baking dish with spring of rosemary on top. Then pouring mixture of EVOO, s&P, lemon juice, chopped rosemary, balsamic vinegar, and some chopped fresh garlic on top... baking for just under an hour at 450. Serving with couscous and roasted or burnt broccoli.
But I'm willing to change if I hear any great ideas!

If anyone else has ingredients on hand and needs recipes/meal ideas... post in this thread! It could be fun

All I have is roasted tomatoes, rosemary....maybe roast the tomatoes on the rosemary sticks? - might be a pretty presentation on top of the couscous
I would def line the gummy bears up on the edge of the plate as little soldiers protecting the chicken.

I would make Greek Chicken (because I love Greek food any which way I can get it )
Lemon Juice, Olive Oil, Oregano, Crushed Garlic. Make Taziki Sauce dipping sauce with Greek Yogurt, White Vinegar, Garlic and Cucumber
I like the idea of rasted cherry tomatoes on Rosemary Sticks. I've seen that before, just make sure to soak the rosemary in water a bit so they don't burn.
I'm having couscous tonight too.
