Chorizo
I always see chefs on TV use this and I love mexican food so I picked some chorizo up at the store the other day. Does anyone have any good recipes that use it? TIA!

i sautee garlic in olive oil and throw in the chorizo and cook till it browns a little then i add chopped spinach and salt and pepper

I love chorizo. There is a little Portugese Deli in Farmingville that has fantastic Chorizo!
I use it in Paella - or just plain chicken and rice. And my FAVORITE is chorizo and eggs. I fry up the chorizo until it is crispy on the edges, add a pat of butter to the pan and fry an egg over easy. You can chop the chorizo and serve the egg over it - or you can just break the egg and dip slices into the yolk.

I cut up chorizo into small pieces, fry in a pan with some onions and green peppers and throw that into my rice and beans.

this is heaven.
I eat fried chorizo with over easy eggs, black beans and corn tortillas. I love it.
you can also make quesadillas with chorizo and cheese
or nachos with chorizo (take corn tortilla chips, layer with beans -black or refried-, one slice of fried chorizo, and a bit of good melting cheese and bake in an oven till cheese is melted.
saute it with onions and peppers and add it to rice
serve as an appetizer (again fried) along side slices of baguette and manchego cheese...spanish olives and a glass of cava...*le sigh*
