CHRISTMAS COOKIES
i need a non-chocolate christmas cookie recipe that's kind to the wallet.
something that i can crank out a lot of to keep the masses happy.

I make oatmeal cookies with cranberries and white chocolate chips
I may or may not use Betty Crocker oatmeal cookie mix and then add the berries and choc chips......

CHRISTMAS COOKIES
Pecan Tassies Dough: 1 8oz. package Philadelphia cream cheese, softened 1 stick Parkay or Imperial Margarine 1 stick butter 1 tsp. baking powder 2 Cups unbleached all-purpose flour (measured, then sifted)
Cut the cream cheese and margarine into the flour using your hands until mixture resembles coarse crumbs. Mold the mixture into a ball and knead lightly until the dough sticks together. Roll into a ball, then flatten into a disc. Wrap dough in plastic wrap and refrigerate for 4 hours or overnight.
Filling:
1 Cup dark brown sugar 2 Eggs ½ Cup dark corn syrup or pancake syrup 2 tsp. pure vanilla extract ½ Cup coarsely chopped pecans
Combine brown sugar and eggs until mixture resembles a thick batter. Stir in syrup, extract and nuts. Set aside
Preheat oven to 350ºF. Unwrap dough and allow to rest at room temperature 10 minutes. Grease mini muffin pan with cooking spray.
Roll dough into 1-inch balls. Place each into miniature muffin pan. Spread each ball of dough out to “line” the muffin cup, leaving ¼” overhang. Add filling to cups, filling only 2/3 of the way up. (Do not overfill- the filling will boil over) Pinch dough into the center, sealing the cups.
Bake for 15-18 minutes or until golden. Allow to cool in pan 10 minutes before removing.
Makes about 3 dozen.

These look so pretty! I'm going to try to make them. I stopped making cookies years ago because they always came out like shit. I think I might be able to make these though lol

Trust me, my 6 year old could make better looking cookies than me. And even I did ok with these. They are easy. (even for a baking spaz like me!)

Shortbread cookies- 2 cups flour, 1/2 cup powdered sugar, 1 stuck of butter. You can cut them in Christmas shapes or just sprinkle red and green sprinkles on top. I made them with my boys tonight. Took us about 10 minutes to make the dough and then 12 minutes to cook them!
