Coconut cream pie recipes?
I think I want to try making this for thanksgiving this yr. I found a recipe that sounds great online that I'll probably try but wondering if there's anyone who has a great one they've already tried. I'm dreaming of the one I had from Briemiere(?) Farms last year!

This is a recipe I've used for coconut custard pie thats really good.

Just a question, a lot of the reviewers say they substitute 2 1/2 cups milk with 1 1/2 cups milk and 1/2 cup heavy cream. Did you do this as well or did you follow the original recipe exactly? TIA!

Coconut Cream Pie
1 Pie crust (I use the Pillsbury unroll-and-fill pie crusts)
Filling 3/4 cup Sugar 1/4 cup cornstarch 1/4 teaspoon salt 3 cups whole milk 3 egg yolks, slightly beaten 2 tablespoons of butter 2 teaspoons of vanilla 1 cup coconut
Prepare and bake pie crust as directed on pie shell box.
In a medium saucepan, combine sugar, cornstarch and salt; mix well. Stir in milk, blending until smooth. Cook over medium heat, stirring constantly until mixture boils and thickens. (this takes some time, make sure the mixture is thick) Boil 2 minutes; remove from heat. Blend (about a cup) of the hot mixture into the egg yolks. (this raised the temperature of the eggs, do you don’t get scrambled eggs) Then add yolk mixture to hot mixture blending well. Cook until mixture begins to bubble, stirring constantly. Remove from heat & stir in the butter, vanilla and coconut. Then pour into baked pie crust.
I toast some coconut – and sprinkle it over the top.
