Coconut rice
How do you make it? Ive seen some recipes that use coconut flakes too.

This one doesn't have coconut flakes but if you want, you could stir in toasted flakes at the end or sprinkle them on top.
1 (14 ounce) can coconut milk 1 1/4 cups water 1 teaspoon sugar 1 pinch salt 1 1/2 cups uncooked jasmine rice Directions
In a saucepan, combine coconut milk, water, sugar, and salt. Stir until sugar is dissolved. Stir in rice. Bring to a boil over medium heat. Cover, reduce heat, and simmer 18 to 20 minutes, until rice is tender.

thanks. DH made it last night and it was SOOOO GOOOD!!!!!!! I've nver had it before so I wasnt expecting such a yummy taste!

This is basically what I do. I sometimes add a little more sugar to taste, and sometimes a touch of honey. I use light coconut milk, and a whole grain basmati rice. Delish!
