I'm open to anything, pasta, vegetable, potato, rice etc....

This is a regular salad - not pasta or anything but it's delicious...

Summer Strawberry Salad:

Baby Spinach
Strawberries
1.2 cup sugar
2 tbsp. sesame seeds
1 tbsp. poppy seeds
1 tsp. paprika
1/2 tsp. worcestershire sauce
1/2 cup olive oil
1/4 cup vinegar
2 tsp. minced onion

Mix together everything except spinach and strawberries. Mix it well and at the last moment, pour the dressing over washed spinach and sliced strawberries. Enjoy!!

Artichoke Bow-Tie pasta salad - from Cooking for Real with Sunny Anderson

Loved it!!!


2 (14-ounce) cans quartered artichoke hearts, drained
1/2 pound bowtie pasta, cooked and drained
1/2 cup, pitted and sliced black olives
4 sun-dried tomatoes, julienned
1 small red onion, chopped
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon red wine vinegar
2 tablespoons olive oil
1/4 cup freshly chopped parsley leaves
Salt and freshly ground black pepper

Toss all ingredients in a serving bowl and let rest, covered, in the refrigerator for at least 1 hour before serving.

This one is a Giada De Laurentiis recipe, it's delicious!


Antipasto Salad

Red Wine Vinegarette:
1 bunch fresh basil, stemmed (about 2 cups)
1/4 cup Red Wine Vinegar
1 clove garlic
1 teaspoon dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup extra-virgin olive oil

In a blender, add basil, vinegar, garlic mustard, S&P. Blend until finely chopped. With the machine running, drizzle in the olive oil until the dressing is smooth. (I just add it and blend it again and it comes out fine)

Salad:
1 pound rotini pasta
1/2 hard salami cut into strips (I use pepperoni)
1/2 cup smoked turkey, cut into strips
1/4 provolone cheese, cut into strips (I used fresh mozz, my mom used asiago)
2 tablespoons green olives, halved and pitted
2 tablespoons roasted red peppers, cut into strips
1/4 teaspoon salt
1/2 teaspoon pepper

Add cooked pasta with salad ingredients. Drizzle with dressing and toss to coat. Refridgerate until ready to serve.

My mom's recipe:

Tortellini Salad

1 lb. Cheese Tortellini
Salami or Pepperoni
1 Green Pepper
Black Olives
Mozzarella cheese cut into cubes

Dressing:
1/4 cup red wine vinegar
1/4 cup olive oil
Pepper to Taste
Salt to Taste
1 tablespoon Onion Powder
1 1/2 tablespoons Basil

Shake or mix up dressing before pouring over other salad ingredients.

These are all great ! I was getting tired of the regular old sides and they all seem easy enough for me to conquer !
