cooking ceci ( chick peas )
this is such a dumb question. my mom is still in italy and i have to cook for my dad aka the pickiest eater in the world. i know my mom makes him ceci with rice . . . how could I make this?
Would you make them seperate and then combine after cooking? Boil the rice and ceci together?
Also, how long do you have to boil "verdura" for? Like escarole? 15 minutes? I don't eat it so I wouldnt know when it was done.

is the only way he likes them with rice?
are you using canned?
does he HAVE to have chick peas?
what about a white bean and escarole soup with some nice bread?
tell us what he likes and what you have to work with and we can help you out

thanks for answering! the chick peas are canned and my dad is the most simple man on the planet - i am shocked that he doesnt want the ceci and rice in different bowls LOL i am trying to stick with what he knows.
he eats things like a steak with PLAIN boiled spinach on the side, tilapia with PLAIN boiled broccoli on the side. Every Friday is ceci and rice with two hard boiled eggs. :le sigh: my mother is a saint

call your mom
*I* would either
cook the rice and the chick peas separately and mix them together in the pot when the rice was done
or
cook the chick peas in the rice pot with the other seasonings, add the rice, then add the water and stir to combine. then cover and cook until rice is done.
generally spinach takes a few minutes to wilt so I wouldn't give it too much time (is it fresh/frozen/canned )
broccoli I'd probably give sometime between 5 and 10 minutes on the stove top, depending on how he likes it.
I am sure he will love whatever you give him. it's not like he has much choice anyway you are a GOOD daughter.

oh TRUST ME, i want to but by the time i get home from work it is too late to call italy LOL and i dont think Uncle Sam would appreciate me making international calls here

my poor dad, he was so shocked to learn that I only do laundry once a week. he is being a good sport though he made his own dinner the first night ( english muffin pizzas ) but I am going to try to make the rest for him! He is making his own breakfast/lunch - he hasnt had it this rough since the army!

If the chickpeas are canned, then I'd cook the rice and add the chickpeas into the pot at the end.
As for escarole- we don't boil it. We heat oil & garlic in a large pot- like a pasta pot- and the raw escarole with a glass of water. put the llid on with al ittle room for steam to escape and keep moving the escarole around in the pot. Add more water as it needs to cook. add salt and pepper and you're done.
I don't ever boil my veggies, so I can' help there.

this post has me bc it reminds me of myself, Tilde an Italian girl that dont know what to do without her mama in the kitchen (or on the phone )
my mom's in italy too right now and my dad LOVES to indulge in dishes from all different nationalities, so he'll do takeout a few nights, but my sister lives down the road, so he gets good home cookin too.
my mom always tells me I cant be her daughter, I gotta ask her the simplest questions, because I obviously didnt pay close enough attention all my life seeing her cook.
my mom makes pasta e ceci all the time.
i was also going to suggest the soup like Ophelia said.
how did it come out ?

last night i made PLAIN burgers ( no cheese, no bun ) and escarole. i guess it came out good LOL
my dad eats the ceci and two hardboiled eggs every friday, so that is when i plan on making it
seriously, i always watch her but she never fully explains stuff, sometimes i will make something she makes - i will write down what she tells me, and then after i make it she will say "OH you remembered to add the olive oil right?" meanwhile she never said it!! She thinks " well its just OBVIOUS"
Since i got married, I learned to make very spicy, flavorful dishes - lots of American stuff too. . .which is perfect for DH but not for my dad AT ALL!
