What about using a small amount of red sauce and mixing in cooked, sliced sausage and some veggies, like mushrooms and broccoli. No baking required.

Do you have an italian specialty store by you (I use Pastosa but they are in brooklyn and Staten Island)

If you do, get some nice fresh manicotti or stuffed shells.

Make your own simple marinara-crushed tomato, olive oil, chopped onion, minced garlic, salt pepper and good amount of fresh basil. Sauce will take less than an hour to simmer, only 10 mins to prep.

All you have to do then is add the sauce to the pasta and bake.

While its baking you could make a small antipasti, some fresh garlic bread, and a side of sauteed veggies.
