Cooking for one?

Does anyone have dinner recipes that work well for one person but don't result in you having lots of leftovers?eating the same meal for days is not fun.

I don't have recipes, but how about freezing some of the meals that you don't want to eat all week? It's just me and my 2 young DDs, so I often have a lot of leftovers. I bring some to work for lunch, but also get bored after eating the same thing 3x in a week.

Check out reynold's wrap website. They have a lot of foil packet meals for one.

Or you could just get one piece of fish and some veges or chicken and veges.

Everyday food always has a feature in their magazine about cooking for one. I can't get on their website right now, but it might be worth checking out.

You can really make anything and just scale it down!

Tilapia piccata is a favorite of mine that's easy to make for one. Just dredge a tilapia filet (or 2) in flour seasoned with s&p, then cook in pan with equal parts butter and olive oil until brown. Remove from pan and deglaze with some chicken stock and lemon juice. Let that reduce a bit and then add your fish back along with some capers and lemon slices and you're done! You can do the same with chicken or veal as well.

You can make baked ziti in ramekins and freeze the extra portions.

You can also bake chicken breats, thighs or drumsticks in individual portions. For bone-in, it's usually about 45-60 minutes. You can season or marinate them in so many ways.. there are endless possibilities! Or you can coat them in panko or breadcrumbs or homemade shake n' bake mixture. You can roast some veggies along with it too and put the leftovers into a salad the next day.

Cooks Illustrated has a book for cooking for 2. We use their recipes all the time. I know it's not for 1 but would only result in 1 days of food left over or you can scale it down
