Corn Salad
Now I need a corn salad recipe. My sister decided to make the potato salad, and I'm going to make the pasta salad and a stringbean salad. I was thinking a corn salad would also be good. Any ideas? TIA!

Whenever I have lfetover corn , i take a few tomatoes & cut them up , add a lil evoo, s&p & basil. I usually do it in a tupperware & then shake it up , you can eat this cold & its really good & simple to make

This Fresh Corn Salad is really good and refreshing.
For something different I love this Corn Tart with Chorizo Cream.

I make a great corn and black bean salad.
You take a can of black beans, corn, a tomato choped up, one hot pepper, half a red onion chopped, handful of cilantro chopped and two avocados diced. Dress it with 1/3 cup olive oil and the juice of two limes with salt and pepper to taste. Shake the dressing to emulsify it and then pour over the salad. Serve cold.
