Crab Cakes

Are there any good crab cake recipes out there. Thanks In Advance!!

1lb lump crab meat picked over
chopped chives
1 egg (beaten)
1 cup bread crumbs
a few dashes of hot pepper sauce
1/4 cup mayo
1 tbsp dijon mustard
1 tbsp worcestershire sauce

Combine all ingredients, mix gentle so not to break up crab. Form into cakes, fry 3 or 4 minutes a side.

I like to serve mine with a sauce made from mayo, horseradish, dry mustard (dash) a bit of dijon mustard and a few shakes of cayenne pepper.

3 (1-ounce) slices white bread
1/4 cup finely chopped green onions
2 tablespoons chopped fresh dill
2 tablespoons reduced-fat mayonnaise
1/4 teaspoon black pepper
2 large egg whites
1 pound lump crabmeat, shell pieces removed
1 tablespoon canola oil, divided
Cooking spray

Preheat oven to 400°.
Place bread in food processor; process until coarse crumbs measure 1 1/2 cups. Combine breadcrumbs and next 6 ingredients (through crabmeat). Divide crab mixture into 6 equal portions, shaping each into a 1-inch-thick patty.

Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add 3 patties; cook 1 minute on each side. Remove from pan; place on a jelly-roll pan coated with cooking spray. Repeat procedure with the remaining 1 1/2 teaspoons oil and remaining 3 patties. Bake at 400° for 20 minutes or until thoroughly heated and golden.

Yield: 6 servings (serving size: 1 crab cake)

CALORIES 140 (28% from fat); FAT 4.3g (sat 0.6g,mono 1.8g,poly 1.6g); PROTEIN 16g; CHOLESTEROL 59mg; CALCIUM 94mg; SODIUM 382mg; FIBER 0.5g; IRON 1.1mg; CARBOHYDRATE 8.4g

Sometimes there is some cartlidge in with the meat. So you just want to make sure you get it and any shells out.

Do they sell fresh lump crabmeat? Where did you buy it?

When I made crab cakes, my fish store told me they don't sell fresh lump crabmeat. He said if they did it would be really expensive. So he sold me crabmeat (small peices) that was in a can. It was OK, but I wanted to see big peices. Was he telling me the truth?

He also said that the crabmeat you see a lot of is imitation crabmeat (red-edged), like the one you see in seafood salads.

Depends on the size you make them, you can 4 decent size cakes with this. Serves 2. I also make this for parties and double or triple the recipe and make mini-cakes, doubling makes about 12-14 and tripling makes about 22 minis.
