Re: Creamed Spinach Recipes?

there's almost no carbs in most creamed spinach recipes.... but they're all pretty fattening Chat Icon

here's mine:

1 shallot-minced
1.5 T butter
1/2t cayenne
1 t sweet paprika
salt
1T flour
2 packs chopped spinach, thawed and drained
1/2 cup 1/2 and 1/2

sautee the shallot in the butter until clear (avoid browning). Add the spices and let cook for about 30s on the heat. Add flour and make a roux. Add 2/3 of half and half. stir until lumps are gone and sauce has thickened. Add spinach and simmer for about 10 min, stirring occassionally.
