Crock Pot Taco Chicken!!
OMG I just made this tonight and it was awesome!!
1 medium onion(s) chopped
16 oz canned black beans
16 oz canned kidney beans
8 oz can of Hunts tomato sauce
10 oz frozen corn kernels
2 cans of 14.5 oz Eden Organic Diced Tomatoes with Green Chilies
1 tsp Old El Paso® Seasoning Mixes Taco Seasoning Mix
1 Tbsp McCormick Ground cumin
1 Tbsp chili powder
2 pound(s) fat-free chicken breast

1/2 cup(s) Weight Watchers Reduced Fat Shredded Mexican-Style Cheese (optional topping)
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).
it makes a lot of servings and only 3 pts each!! even DH loved it. im eating some leftovers for lunch tomorrow. i made it over white rice. i ate it almost 2 hours ago and im still full.
and so easy to make! i prepared it last night and this morning threw everything in the crock pot. i love that thing!

its supposed to make 10 servings, but i think that depends how much chicken you put in. i put in a pound last night and had so much left over of the beans and stuff. i put that away so another time ill just add the mixture again and more chicken.
