crockpot chicken caccitore
hi guys! DH and i made something tonight that i had to post about theres a recipe for chicken cacciatore that we love, but its kind of a pain to make, so last night we decided to throw all the ingredients in teh crock pot and see what happened... and it came out really good, i hvae to say!! its a little on the spicy side, and its more like a stew, so it would probably be great with some pasta... take about 1-1 1/2 pounds of chicken breast about a tablespoon of balsalmic vinegar some olive oil crushed red pepper flakes ( to desired spiciyness) one onion chopped up one bell pepper chopped up one cubanelle ( spicy) pepper chopped up 28 oz can of diced tomatoes about a tablespoon of chopped garlic about 1/4 cup of water
throw it all in the crockpot with the chicken on the bottoom and cook on low for 8 hours.. when its done, stir it up and the chicken willl shred up so its more like a stew... tastes pretty good! again, a little spicy, but good

I wrote it down, maybe we will try it next week. I will let you know what we think. Do you think it will taste funny without the cubinella pepper? I have kiddies, they aren't into spicy foods.

I think I will try this over rice or egg noodles. I am going to leave out that one spicy pepper though.

I am making this for dinner tonight...it is in the crock pot right now...I didn't use the odd pepper though and I used chicken broth instead of water...I hope it turns out YUMMY!!!! I will let you know what we think....

I just ate some of this and it is so good. I used rotini noodles....my daughter's request, and it was absolutely delish (I would use egg noodles or rice though). I have been searching for a yummy chicken cacciatore recipe for along time I think I just found one. I can't wait to make it for someone other than my family!!!! Thanks for the wonderful recipe!!!!1

glad ya liked it!! the ingredients are a rachel ray recipe... we were too lazy to do all the work one night and threw it all into the crock pot instead teh rotini noodles sound awesome... thats exactly what i had told DH we shoudl have with it next time
