Re: crockpot ideas

If you do a search on here, I think there was a ton of recipes a few months back. I got a really good one for broccolli cheese soup on here but I don't remember the exact measurements of the ingredients.

Re: crockpot ideas

I made a great one with chicken, 1 can halved artichoke hearts, bunch of red peppers/or roasted ones/ red potatoes quarters, 1 tbsp minced garlic, balsamic vinegar, sun dried tomatoes, minced fresh parsley, mushrooms

I went off a recipe but then I winged it. I threw in the last 3 hours the mushrooms, artichokes, parsley, dried tomatoes.

Really good.

I live off my crockpot....GET THE LINERS THEY ARE A GOD SENT IN CLEAN UP!

EDIT:
I experiment a lot with it.
Tonight I threw in chicken cutlets/diced, mushrooms, can of reduced fat cream of mushroom soup, 3/4 cup skim milk, 1/4 cup white wine, 3 sliced carrots and 4 red potates.

We shall see when I get home how it turned out.

Re: crockpot ideas

Every once in awhile I will put boneless pork ribs in the crockpot with a good brown sugar BBQ sauce.

Re: crockpot ideas

i just made chicken with dumplings in mine and it was really good... I am pretty sure this is the recipe ( i dont have it w/me)

4 chicken thighs uncooked
1 large carrot cut into chunks or about 10 baby carrots
2 potatoes cut into cubes
1 can chicken broth
1/2 cup water
1/4 tsp salt
1/4 tsp pepper
1/8-1/4 tsp dried marjoram
1 tbsp flour
1/2 cup biscuick
1/2 cup water
1 small can of peas

Mix the flour, salt, pepper, marjoram with the broth & water. Add the potatoes, carrots and chicken. Cook on low for about 7 hours.
Add the canned peas, then Mix the biscuick with water and drop by spoonfuls over the chicken mixture. Cook on high for about 20 minutes or until dumplings are done (stick a toothpick in, if it comes out clean, they are done!)
It was really good...I might be off on some of the measurements, so just taste it to see if its salty enough or whatever..It was kinda like a stew-chicken pot pie! YUM!

Re: crockpot ideas

Last night I made a recipe from a low carb book.

1 Tbs. Olive oil
2 Tbs. Minced onion flakes
1/2 Cup prepared pesto sauce
1/2 tsp. Pepper
2 Lbs. Chicken breast
2 pints grape tomatoes
Fresh mozzarella

grease crockpot with oil and leave the remainder in the pot.

Mix pesto, onion & pepper in pot.

Place chicken breast on top, coating each side with mixture.

Top with tomatoes.

Cover and cook on low for 6 hours.

To serve: Place chicken breast on plate in a bowl. Top with tomatoes and a couple thin slices of the fresh mozzarella.

Yum, that looks really good! I imght to try this one Chat Icon
2 questions though, if you use one of those liner things, would you still oil it?
Also, are the chicken breasts with bones or boneless?

I bought a crockpot a few months ago and I am so afraid to use it!!

Re: crockpot ideas

Sorry, boneless.

I would still use the oil. I think it adds to the flavor.

Don't be afraid of it! They are so easy and helpful to use. I also made a quiche the same night and it turned out really well.
