Probably not what you're looking for BUT this was in my book so here it is.....
Serves 4
3 tbs. olive oil 1 onion chopped 2 celery sticks chopped 1 carrot sliced 2 garlic cloves peeled & chopped 1 potato peeled & diced 9 oz. generous 1 cup red lentils 1 1/4 pints/3 cups near-boiling vegetable stock 2 bay leaves 1 small lemon 1/2 tsp. ground cumin cayenne pepper or Tabasco sauce, to taste salt & ground black pepper lemon slices & chopped fresh flat leaf parsley, to serve
Heat oil in frying pan. Add onion & cook, stirring frequently, for 5 minutes, or until beginning to soften. Stir in celery, carrot, garlic & potato. Cook for a further 3-4 minutes.
Tip the fried veggies into crockpot on HIGH. Add lentils, vegetable stock, bay leaves & a pared strip of lemon rind & stir briefly to combine.
Cover crockpot & cook on HIGH for 1 hour.
Switch to low & cook for a further 5 hours or until vegetables & lentils are soft & tender.
Remove & discard bay leaves & lemon rind. Process the soup on a food processor or blender until smooth. Tip the soup back into the cleaned crockpot, stir in the cumin & cayenne pepper or Tabasco & season.
Cook the soup on high for a further 45 minutes or until piping hot. Squeeze in lemon juice to taste & check the seasoning. Ladle into warmed bowls & top each portion w/lemon slices & a sprinkling of chopped fresh parsley.
