Cutting board
I want to get a wooden butcher's block cutting board but my friend tells me that it's not safe because of bacteria from the meats.
Can't I just throw the block into the dishwasher?

Re: Cutting board
i have one of each kind.. i have a wooden one, a plastic one, and a glass one. i use the glass one for meats, because they say the bacteria doesn't get into that as easily. i really only use the wooden one for veggies or if i'm cutting up fresh herbs or something...

Re: Cutting board
It is better to use a plastic ones for meats.
I have a huge wooden one that I leave on my island (it wouldn't even fit in my dishwasher) I use it for basic cutting of the kids food and stuff. When I cut meat I use one of my plastic ones.

Re: Cutting board
I have wooden and plastic. I put them all into the dishwasher. My wooden one is very thick. I usually cut meat on the plastic ones though.

Re: Cutting board
You should use the wooden one for vegetables and a glass or plastic one for meat. She is right about the bacteria and the wood cutting board.

Re: Cutting board
I have a plastic one too that I use now for everything. It's just so annoying because it slides all over the place while I'm cutting.

Re: Cutting board
My brother is a chef and he bought me a bamboo cutting board for Christmas. He told me to ONLY wash it in with soap and water. It also should be treated with special oils so it does not dry out.

I put a dish towel under mine and it helps with the sliding.

Re: Cutting board
don't put it in the dishwasher, if it is really on the grundgy side you can try some butchers wax to clean it and then minreral oil to keep it clean HTH
ETA: You can buy little rubber stickies to put on the corners of the rubber ones so they don't slide. I found them at bed bath and beyond a while ago for my mom

Re: Cutting board
I have a bunch, but I use a plastic one just for meats (raw). I do cut cooked meat on my wooden ones. They go into the dishwasher, but I air dry them, not use the heated drying cycle.

Re: Cutting board
I don't cut any meats on my wooden cutting board, I use a plastic cutting board for my meats then put that in the dishwasher.

Re: Cutting board
The problem with wood and plastic is that when you put them in the dishwasher they expand and the bacteria gets trapped. I recently went to a cooking class and they recommended the epicurean. It's a composite which will not expand in the dishwasher.
ETA: You can put a damp paper towel under the board to stop the slipping.

Re: Cutting board
Studies have shown that wooden cutting boards are much safer than plastic, when it comes to bacteria.
"You should use a hard wood cutting board for the sake of your knives and for sanitary reasons. The myth is that wooden boards are so porous that harmful organisms such as salmonella, e-coli and listeria soak in, are hard to remove, and easily contaminate other foods placed upon it later.
The myth has been compounded with the belief that plastic, because it is not porous, can be more easily and safely cleaned. These beliefs were so widely held by everyone including health officials that no one actually bothered to test them until 1993. Microbiologists at the University of Wisconsin's Food Research Institute contaminated wooden cutting boards and plastic ones with all bacteria that cause food poisoning.... Guess what?
Without washing, without touching it, the bacteria on the wooden board died off in three minutes. On the plastic board? The bacteria remained and actually multiplied overnight. It seems wood has a natural bacteria-killing property, plastic and glass don't."
http://www.reluctantgourmet.com/cutting_board.htm
However, there are other studies that show differently. DW uses a combination, and as long as they are cleaned after using, either should be fine.

Re: Cutting board
never put a wood cutting board in the dishwasher. just rinse with soap and water and then towel dry.
we mostly use "jelly" cutting boards and just toss them in the dishwasher.

Re: Cutting board
Plastic is horrible on your knives and you can clean your wooden one with 10 parts water one part bleach. That ratio is food safe and kills the bacteria. DH went to cooking school.
