Daycare mommies
I was scolded this morning because I haven't brought in any "real" food for Alex yet. I always just give them a bunch of baby food jars of veggies or fruit, and cheerios. I'm completely UNCREATIVE in the food department.
What do you give to daycare for food? Any ideas? They suggested Mac n' cheese to start but I'm not crazy about the artificial cheese. Has anyone ever made homeade mac n'cheese?

I don't have to provide food for daycare - they do it.
If you want, I can see if I can get the menu for Alex's age group. I can fax it over to you.

Hmmm... that would be soooooooo much easier if they fed her, eh? I can barely think of food to feed myself, how can I be responsible for cooking up yummy cuisine for my daughter?!
You ROCK! That would be awesome if you could do that!! She's 10mos.

We have made homemade man n cheese or I buy organic mac n cheese and make it for her. What about cous cous with small chunks of chicken? Mini meatballs? I can't remember if you are vegetarian or not though.

Instead of mac & cheese you can cook up some pastina, orzo, or abc pasta and mix in some cheese, milk, etc. I've made it lots of different ways, with a bit of butter and purred veggies from our dinner --- shredded cheese, parm cheese, spagetti sauce.
Also she loves spagetti and meatballs.
What about chunks of avacado and other fruits -- soft ones like pineapple, honeydew, cantalope?

That's the problem - we're veggies and trying to raise her without meat, but I'm starting to realize it's going to be difficult to always think of alternative menus

Black beans -- I don't know too much about different kinds of beans but the kind you normally get at spanish restaurants....small black beans.
She also likes chick peas a lot.
And last night we gave her florettes of brocolli for the first time and she DEVOURED them! I was so surprised becuase she's been on a solids strike and yet she ate the brocolli like crazy.

You'd be amazed at what they can eat! Around a month ago I started to try and get creative because Emily REFUSES baby food -- she HATES it. She doesn't have any teeth either, and I can give her big chunks of chicken (sometimes she'd rather gnaw at something then have small little bits of it) and within a few minutes she's bit tons of pieces off. She does it all with her gums. Of course I am right at her side and watch to make sure that she isn't choking --- but she can seriously handle a lot more then I had origionally thought.
She also loves grilled cheese sandwiches.

I also have to warn you -- beware with the beans! LOL! I made up a bowl of them for her and it took 3 days for her to finish them -- so she basically had beans at 2 of her meals 3 days in a row -- and for the rest of that week we had the most horrible explosive poopies -- they were so bad and went all over the place.
She normally is a bit on the constipated side so one meal every few days isn't a bad thing --- but 2 meals every day for a few days was a little much!

I am a big fan of pastina- I either add butter and a little parm. cheese... or milk and a little american cheese... Ryan loves it!
I also cut up fresh fruit real small...
yogurt
Im a big fan of the table tods microwaveable food.... Ryan loves their spinach and cheese ravioli... It takes 25 seconds to warm up- they are sooooo soft....I just break one aquare into 4's for him...

FYI with the beans....make them by themselves and freeze them! I do it all the time for myself! I love rice and beans.
Beth...I have a red beans and rice recipe (several probably amongst all the cookbooks).
Mac N Cheese (from betty crocker) 2 cups uncooked elbow macaroni (7 oz) 1/4 cup butter or margarine 1/4 cup all purpose flour 1/2 tsp salt 1/4 tsp pepper 1/4 tsp ground mustard 1/4 tsp worcestershire sauce 2 cups milk 2 cups shredded sharp cheddar cheese ( 8 oz) <you can also try Vermont white cheddar or 1/2 sharp cheddar & 1/2 monterey jack)
Heat oven to 350. Cook macaroni (duh) Whlie mac is cooking, melt butter in 3 qt saucepan over low heat. Stir in flour, salt, pepper, mustard, and worcestershire sauce, Cook on low, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 min. Remove from heat. Stir in cheese until melted. Drain mac, gently stir in mac into cheese mixture. Pour into ungreased 2 Qt casserole dish. Bake uncovered 20-25 min or until bubbly.
** and I'm sure it freezes well too!

Beans are a great source of protein. What about cereal with milk. My ped said she can have milk that way since she's fine with cheese. Yogurt and cereal too.
