Delicious WW Recipe I tried - 2 Point Chocolate Cupcakes
Have been wanting to try this for a while and finally did it yesterday. Hard to believe mixing one box of chocolate cake mix and one can of diet coke can produce moist and yummy cupcakes. Well it did. The cupcake was super moist and delicious! I made 24 cupcakes for 2 points each. YUM! You can also make a regular cake in a 13x9 or bundt but the points would be higher for 12 servings.
Ingredients: One box of chocolate cake mix (I used Duncan Heinz Devil's Food Cake Mix) 1 can of diet soda (I used Caffeine Free Diet Coke)
Mix both together and pour in cupcake tins or cake pan and bake as directed. I baked it on 325 instead of 350 since I was using dark coated cupcakes tins.
Enjoy!

You can also substitute the Diet Coke for a 16oz can of PUMPKIN, and then it counts as a VEGETABLE!!!
Life is good.

I have done it this way too. At first I was grossed out by the thought but if you use Devil's food cake mix the chocolate taste is so strong that it takes over and you don't taste the pumpkin at all... It makes it so nice and moist too!

I used to make these when I was on WW years ago. If you want a real treat, use diet orange or black cherry instead of just diet coke....OMG...soooo good!!
