I think that Peep-Sunflower cake is so cute!
You can also do a Kit-Kat cake w/Easter candy and colors.
Carrot Cake is a popular dessert.
You can do whoopie pies in Easter/pastel colors.
Mini-Lemon Meringue Tarts would be delicious.
You can make your own chocolate covered peanut butter eggs.

Re: Dessert ideas for Easter?
I have a recessed pan (almost like a tart pan but deeper). I just used a chocolate boxed cake, filled it with vanilla pudding frosted the edge (makes the peeps stick), stuck the peeps on and put chocolate chips on top of the pudding to look like seeds.
That said, if you do not have the kind of pan i do, i have just seen a regular cake with chocolate frosting used instead. Just put the peeps all around the edge.

I think I'm going to make these Cadbury cream egg Cupcakes!
It's just a regular chocolate cupcake but with a mini cadbury cream egg in it. If you freeze the candy before dropping it into your batter, it won't be baked into the cupcake and lost in there. The frosting is just plain old frosting dyed and piped to look like cadbury cream filling.

If there is no link I can pretty much tell you that it is the kitkat cake but with dyed sweetened shredded coconut and some cadbury mini eggs.
