Desserts...
I'm in charge of the desserts for Thanksgiving at the ILs. I've decided to make a pumpkin pie and an apple pie, but DH wants another option like cake or something.
Anyone have any ideas? What do you all have for dessert other than the usual pies?

Brownies and rice pudding are favorites in my family. Also, my BIL likes cakes, so sometimes I make one if we are going to their house - chocolate cake with white icing. Sometimes I make cupcakes too, since the kids like them better than pie.

Oh, whoops- just re-read your post.
How about coffee cake? It's easy to make. Also, a co-worker recently brought in the most incredible bread pudding (and I HATE bread pudding). If you go to food network's website, look for Paula Deen's recipe. It's made with Krispy Kremes!!!

it's pie but we placed our order for briermere farms pies
Apple pie & raspberry peach pie.
I think I might also make turkey cupcakes (using chocolate frosting and candycorns for tail and mouth)

this is my favorite! Cheescake topped brownies
1 21 1/2 oz fudge brownie mix ( i always use betty crocker fudgebrownies 13x9 family size red box)
1 8 oz package cream cheese softened 2 tbsp margerine or butter softened 1 tbsp corn starch 1 14 oz can eagel brand CONDENSED milk (not evaporated milk) 1 egg 1 tsp vanilla extract 1 can chocolate frosting
preheat oven to 350 degrees. Prepare brownie mix as directed on box. Spread into well greased 13x9 baking pan. In a small bowl beat cream cheese, butter and cornstarch until fluffy. Gradually beat in sweetened condensed milk ,then the egg and the vanilla until smooth. Pour evenly over brownie batter. bake 30-35 minutes or until top is lightly browned. Let cool then frost with chocolate frosting

Honestly, I am a sucker for Betty Crocker/Duncan Hines yellow cake with chocolate or vanilla frosting. So easy and so delish!!
Cheesecakes are always a good choice too!

This is what I always make - everyone loves them!
The best of all possible worlds -- creamy cheesecake filling on a chocolaty crust made easy with Pillsbury® cookie dough
1 package (8 oz) cream cheese, softened 1/2 cup sugar 1 egg 1/2 cup coconut, if desired 1 roll (18 oz) Pillsbury® refrigerated chocolate chip cookies
1. Heat oven to 350°F. In small bowl, beat cream cheese, sugar and egg until smooth. Stir in coconut. 2. Break up half of cookie dough into ungreased 9- or 8-inch square pan. With floured fingers, press dough evenly in bottom of pan to form crust. Spread cream cheese mixture over dough. Crumble and sprinkle remaining half of dough over cream cheese mixture. 3. Bake 35 to 40 minutes or until golden brown and firm to the touch. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. For bars, cut into 4 rows by 4 rows. Store in refrigerator.

I know I'm not Christine, but I have a super easy recipie for the rainbox cookies ..
I will admit I "stole" it from Farah, she posted it on LIWs around holiday time last year (they came out really good!):
3 pans the same size - 10 3/4" long x 7" wide x 1 1/2" deep.
4 eggs 1 cup flour 1 cup sugar 1 teaspoon almond extract 1 cup melted butter food color
FOR TOPPING 6 oz chocolate chips 1 tablespoon oil
FILLING Jam - apricot, strawberry or raspberry
Beat eggs until fluffy. Add sugar, then flour, melted butter and extract. Mix well. Divide into 3 bowls. Add green food color to one, red to another and leave the third plain. Turn into pans and bake at 350 for 10 minutes or until light brown.
Let cool. Put first layer on wax paper and spread with jam, then put plain layer on top of that and spread with jam. Lastly put red layer on (trim edges at this point so it's all even)
Melt chocolate chips and oil. Spread chocolate on top of cake and refrigerate or freeze until chocolate is hard. Flip and spread chocolate on other side and refrigerate/freeze. When both sides are hard, cut into small pieces.

DH made this a couple of weeks ago.... It was soooooo good. It tastes better 3 days later after the flavors have soaked the cake.
Toffee-Topped Rich Chocolate Cake The combination of rich ingredients produces a decadent, caramel-soaked cake that's sure to be a hit!
1 package Betty Crocker® SuperMoist® German chocolate cake mix 1 1/3 cups water 1/2 cup vegetable oil 3 eggs 1 can (14 ounces) sweetened condensed milk 1 jar (16 to 17 ounces) caramel, butterscotch or fudge topping 1 container (8 ounces) frozen whipped topping, thawed 1 bag (8 ounces) toffee chips or bits
1. Heat oven to 350ºF. Generously grease bottom only of rectangular pan, 13x9x2 inches. Make cake mix as directed on package, using water, oil and eggs. Pour into pan. Bake 33 to 38 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. 2. Poke top of warm cake every 1/2 inch with handle of wooden spoon. Drizzle milk evenly over top of cake; let stand until milk has been absorbed into cake. Drizzle with caramel (or fugde) topping. Run knife around side of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled. 3. Spread whipped topping over top of cake. Sprinkle with toffee chips. Store covered in refrigerator.

Ice box cake is big in my house, basically it is graham crackers layered with chocolate pudding and then refridgerated. Serve topped with cool whip. Yum!!!
