dinner for a plain, non-adventurous eater

We are having our friends over for dinner this Sunday. My friend doesn't eat seafood, and is extremely plain.
Any suggestions?

I was thinking roasted chicken, burnt broccoli (like Teller's makes) and mashed potatoes.
But I am open to suggestions. Thanks!

Is pasta out? Like a lasagna or ziti? Your menu sounds good though but i love corn with my mash potatoes.

Some other ideas:

-corn or corn on the cob cooked in the ove
-oven roasted veggies
-London broil or steak
-side salad
-steamed spinach
-maple glazed carrots
-lemon chicken
-Swanson chicken, veggies and herbs. It cooked in chicken stock with potatoes and carrots.
-meatloaf

Maybe breaded chicken cutlets instead of the roasted chicken. I know some very picky people who won't eat meat on the bone. Rolls or some type of bread is always a good bet too.
