Dinner ideas needed -no meat
I am hosting dinner for my inlaws next week and they very rarely eat meat of any kind. Do you have any ideas for a great meal? I was thinking some sort of pasta- stuffed shells or something but MIL also eats very healthy, so I'm not sure. This is hard! Help

Baked Ziti is always good. Add some veggies and fresh Italian bread or garlic bread and you got a whole meal.

I make pasta with fresh veggies all the time. It's pretty healthy.
1 lb fresh string beans, 2 broccoli crowns. Cover them in EVOO, lots of minced fresh garlic, salt, and red pepper flakes. Bake at 350 for 40 minutes. Serve over 1lb of pasta with a little more EVOO, and some reg. parm. It's really easy too.

How about something like this - Pasta Primavera My mom makes something similar but she serves it with spaghetti or angel hair and she adds sun dried tomatoes. Sometimes for a really full meal she will add strips of grilled chicken. Yum - my favorite dish in the world.

I hate to say it, but if they eat healthy meals, they definitely wouldn't want Italian-america food.... way too carby and fatty....
I second the stir-fry idea.... or else, you could make veggie patties with side dishes
Here's my veggie patty recipe: 1/2 bell pepper 2 packs mushrooms 2 eggs seasoned breadcrumbs (about 1.5 cups)
Puree pepper and mushrooms (it will make an ugly brown sauce). Transfer to a bowl. Add 2 eggs and bread crumbs. Add salt. Mix. (It should be a similar consistency to oatmeal... if not, add more crumbs)
Heat up peanut oil (unfiltered is more flavorful), and fry patties.
