Not sure if they would be interested in a Hibachi show but Teppan Edo is in Epcot.

Not sure what your DS is into but Chef Mickey's is fun. If he likes winnie and friends there is crystal palace.
Not sure if you are locked into the dining plan or if your DC scares easily but there is TRex Cafe in DTD if your DC like dinosaurs.
Someone else mentioned tappen endo habaci place which would be fun.
If he likes fish you could try Coral Reef.
Just make sure you tell them that it is your DS's birthday and they will do their best to make it special.
Ohana brings you up and will sing to him and is fun too
You know you can order a cake if you want to do that.

Chef Mickeys is great! Whatever restaurant you choose don't forget to make a reservation months ahead of time...they can book 6 months ahead for reservations. Then you won't be stuck with a terrible eating time or waiting hours to eat.
Also, if you are visiting a park that day go to guest services and let them know that it is your DC birthday and they will give him a special birthday pin. Sometimes the cast members will do special things when they see the pin.
