DH and I LOVE Disney World (we're actually going back in January!) Everything you booked sounds fun, but a great website I use is www.allearsnet.com, so you can get info on different things, travelling with children, what rides will be closed when you go, etc. It helps so much! Enjoy your trip!

Ohana for Breakfast at the Polynesian. It's the best one! It's Lilo, Stitch and Friends...they have a childrens parade with maracas, it's great.
I really liked Hollywood & Vine, which you're doing. They're opening a new character dining at Animal Kingdom...you might want to check that out too
ETA: oops, just read you booked the place at Animal Kingdom. I can't wait to go back and go there.

Re: Disney trip BOOKED!!!
OHANA!!! we never did the breakfast, but we go there for dinner at least once everytime we go to Disney. Its one of our favorite places.
also, Whispering Canyon at the Wilderness Lodge was really good and really fun for kids (and adults), and the food was delicious also.

Re: Disney trip BOOKED!!!
WOW! YOu have a lot of character interaction planned!!! Sounds like fun!
The restaurant in mexico is awesome (I was there a week ago!) and so is the one they have in Italy in the interim.
DEFINITELY see Fantasmic! It's incredible. Also Spectromagic and Wishes (at MK) are definitely worthwhile. A lot of people also love Illuminations. I like it, but I don't love it.
