We went to the Orange Tree Resort in Scottsdale a few years ago. It was easy to do the exchange and the resort was nice. The room was a little smaller then a DVC 1-br - it just had a kitchette instead of a full kitchen but it was a really nice room.

The Charleston Place hotel in Charleston, SC is fabulous. You can use extra points to stay on their club level (complimentary and wonderful food spreads pretty much all day; complimentary wine, beer, and drinks). And Charleston is beautiful. Also, I've heard great things about the Fairmont in Sonoma, CA.

We used ours for a hotel in London (the Dorcester) and it was great.
We have yet to do the full week exchange though at another resort. We did go to Hilton Head and Vero Beach but those were both Disney properties.
