Do you ever experiment with new veggies?

Sometimes I get intimidated by not knowing how to prepare or eat a new veggie - but lately I have been getting adventerous (thanks to the farmers market I have been working at).

Tonight I tried Candy Stripe Beets....yuuuuuummmm....


and you?? try anything new lately?

Funny, although I have eaten them I never MADE beets -- until last week! Yum is right!

You know, I really don't...but I always want to! I just get so intimidated LOL. I just made brussel sprouts for the first time a few months ago and they were awesome. Ok, you've inspired me! What other weird ones do you make? And how did you make the beets?

You know, I really don't...but I always want to! I just get so intimidated LOL. I just made brussel sprouts for the first time a few months ago and they were awesome. Ok, you've inspired me! What other weird ones do you make? And how did you make the beets?



I actually boiled the beets...I cut the greens down (but not off), wash them, put them in a pot with cold water and then boil them for about 35-45 min. Once they are soft enough to put a knife through, run them under cold water and the skin basically comes right off. It's VERY easy!!!

I also started making artichokes often, and spaghetti squash also. I also started cooking with leeks more often.

At the farmers markets they have tons of things you can never find at the stores though and every week I would like to try something new.

I usually wait until I have a good looking recipe to try a new veggie. I never had leeks until I found a leek and squash risotto recipe.

I will try anything new as long as its vegetarian - any vegetable, fruit, dish, etc - in thailand they had some cool fruts... it was awesome!!!

Nothing is more adventurous than eating a durian!!!

The beets sound good...I guess you can roast them too? Now that its fall (almost) I'll start doing my roasted veggies - all kinds of potatoes, parsnip, carrots, etc. on a sheet pan in the oven and I should start throwing other different ones in there as well. DH loves spaghetti, acorn and butternut squash so we make those pretty often. I've never tried cooking leeks.

What farmer's market do you go to?

I tried brussel sprouts recently. That's about as adventurous as I get.

I used to get the funkiest fruit in DH's lunches. The produce guy at S&S knew me & would tell me what was good.

Yeah, we've been forced to now that we're part of a farm cooperative - we don't choose the fruits or veggies that they deliver every week, so I bought a few seasonal cookbooks and experiment with most of what they give us.

So, tell me, what do you do with the beets? We get beets every other week and I have no idea what to do with them!

Any ideas for Okra and Cabbage?

Beth - white or red cabbage?

With the beets you can make salads with them - I like to add them to my salads or just eat them with a little salt as a side dish. They are GREAT with some greens and goat cheese. yummm...

We just got a HUGE white cabbage. Last time we got it DH made stuffed cabbage with vegetarian meat crumbles. Chat Icon

with white cabbage I like to shred it and then add some olive oil and lemon - let it sit for a day in the fridge and you have a healthy cole slaw.

Also butternut squash roasted the same way.

BORSCHT (Beet Soup)

4-6 fresh beets

Scrub with top leaves cut off; wash and save leaves to cut up in soup. 1 med. onion 1 bay leaf 1 tsp. salt 2 tbsp. sugar 2 tbsp. vinegar 2 tbsp. cornstarch 3-5 stems fresh dill weed
(If fresh beets are not available, you may use 4 one pound cans of canned beets.)

Cook beets in water until fork tender. Remove beets from pot and cool slightly in order to peel the skin off. Save the beet juice and water to make the 2 quarts and pour into soup pot. Shred or slice beets into soup pot.

Add the onion, bay leaf and cut up the leaves into pot. Bring to a boil adding the salt, sugar, vinegar.

Mix the cornstarch with 1/2 cup of water until smooth and then add to soup stirring as it cooks. This should thicken soup a little, you don't want it thick but just a little thicker than water. Cook soup for about 10 minutes or so.

Lastly add the dill weed for the flavor. You may discard the onion, bay leaf and dill when the flavor is in the soup. You may also season to taste as to the amount of sugar and vinegar to add. This soup is sweet with a little tartness. It is delicious hot or cold.

Okra- I love putting a ton of them in my gumbo.
They are really best fried with ranch dressing.

Funny post-I bought parsnips this week for the first time and forgot about them. I better get recipe hunting.

I actually ate the skin on the beets - they were real small so the skin wasn't tough. The butternut squash I peel before chopping up.

I recently made escarole with garlic and oil and white canellini (sp?) beans. It was super yummy especially for the first time I made it.

Also butternut squash cut in half long ways (skin kept on) drizzle with olive oil, salt and pepper and bake. good and fun to pull out of the skin when eating.
