I cook a roast chx and after we eat most of the meat from it: put carcass and any left over parts (skin, etc.) in a pot with 2 carrots, 2 celery, 8 whole peppercorn, a couple of bay leaves and a whole onion, fill pot with water until carcass is submerged, boil and then simmer for at least 2 hours, then strain.

I actually use a fryer JUST to make broth. I freeze the broth and keep it to use. I put a fryer in a stock pot and cover it with water. I also put in the neck and the heart and liver.
Then I add a few sprigs of fresh rosemary, some fresh thyme, 2 large quartered onions, a few broken carrots, 3-4 small inner ribs of celery with the leaves, freshly ground pepper, kosher salt.
I bring it up to a boil and then reduce heat down low and let simmer for 2-3 hours... sometimes longer as long as it doesn't cook down and reduce TOO much (gotta watch and replace a bit of water sometimes).
Strain the broth out and use the chicken meat for chicken salad (throw everything else in the garbage). I put the broth in the fridge overnight and skim the fat off the top the next morning. The broth that remains can be used right away in recipes or can be frozen in ice cube trays for future use.
