does anyone have a sausage and peppers recipe w/o
tomato sauce?
just sausage, peppers, onions, evoo, but what else to make it moist and tasty?

I do the sausage and peppers and onions... and I cook it with chicken stock... it keeps everything moist and it actually creates somewhat of a sauce. We eat it plain or in hot dog buns and it doesn't need any tomato sauce! Just the regular ingredients with chicken stock! Try it!

I do it with chicken stock and some Wondra to thicken the sauce. But I don't eat it, so I have no idea how it is....my husband likes it!

I dont use chicken broth just olive oil. Slice up the peppers and onions, ince some garlic, toss with olive oil and alot of salt, pepper and garlic powder. Put the sausage links on top of the peppers/onions mixure and throw in the oven and bake until done. The key to not dried out sausage is to cook it whole. Dont slice until after it is cooked. The peppers give off water and combined with the olive oils makes its own "suace"

i have to find it.....the one i use is no tomato sauce. its chicken broth and white wine with garlic and then the sausage, peppers and onions.
ETA....just looked on food network and thats not the one, it might be in her cookbook that i have. i will look for it!

I cook it the old school (read un-healthy) way that my grandmother used to:
I use a combination of sweet and hot italian sausage. Cut each sausage link into about 3-4 pieces. Fry in a pan of olive oil until browned and cooked through. Remove sausage from pan - DO NOT discard oil.
Cut onion into slices. Fry those in the same oil used for the sausage (add more if necessary) until soft and tender. Cut italian peppers into long strips. Add to onions and cook until peppers are also soft and tender.
Put sausage back in the pan with the onions and peppers and mix well.
**The juices from the onions and peppers come out and the flavor comes from the sausage

I put my sausage on grill (sweet & hot).
I cut up red onions, yellow, red and orange peppers and drizzle w/olive oil and put in pyrex dish and bake.
Then add sausage to peppers. Extremely easy and delish
