Does anyone here make fresh potato pancakes/latkes for their DC?

And if so, can you share your recipe/secret? Ava loves them, but they come out horribly when I make them. I don't want to use a mix anymore because it's too salty. TIA!

yes! its so easy:

3 med size potatoes
1 med-large onion
1 egg
a little flour
S&P

peel & grate potatoes and onion-use the large side of the grater

put in a bowl

add the egg

light sprinkle of flour(not too much-just enough to absorb liquid)

mix all ingredients

let sit for 10-15 minutes

(you might have to dab w/paper towels to absorb some more liquid)

add s&p

heat olive oil in frying pan on high/med high...make sure oil is fully heated

use a ladle spoon to pour mixture in pan, or use a measuring cup& pour in.
serve w/sour cream or applesause!

Yes, I do but not for DD.

The secret is how you grate the potato and onion. I have a mesh that goes over a bowl and I rub the potatos and onions across it so it's a lot less defined then if I grated them. It kind of turns into this lumpy mush but that makes for the best frying consistancy, IMO. You also don't need an egg to hold the mixture together and just season it.

see ive done it this way also, and I wasnt crazy about the consistency-when i grate the potato on the large grater-they come out so much tastier(if that even makes sense!) and thicker-like authentic latkes/pancakes...i guess its all a matter of personal preference!

I use the above recipe too, but we grate the pototoes in the food processor with the shredder attachment so much easier and quicker!
