So far on the menu I am making ham in a brown sugar glaze, roasted asparagus with lemon, butter and tarragon, either au gratin or scalloped potatoes with pancetta, or potatoe pie. I haven't figured out the apps or desserts yet. I am also making fresh strawberry and prosecco as a drink offering. I am having 8 adults and 8 children.

There will be 7 of us and I am making filet mignon, roasted potatoes and asparagus and I will make a small tray of ziti!

Everything sounds delicious! I was thinking a ham, veggie, potato...and then penne a la vodka--having about 8 people. How do you make potato pie? Would love that recipe!

I don't measure, it's all by eye:
-Mashed potatoes (prepare as you normally would. I use butter, milk or 1/2 & 1/2 or heavy cream depending upon my mood (I use a whole bag of potatoes). Set aside.
-2 eggs.
-Apprx 2 cups freshly grated parmigiano cheese (I like Reggiano), but any will do.
-Pancetta (diced and cooked, but not too crispy). OR thick sliced proscuitto (you don't have to cook this).
-Diced hard or Genoa salami
I would say about 1-1/2 - 2 cups total of meat
-Salt & pepper
Put mashed potatoes in a large mixing bowl, add eggs and incorporate into the potatoes. Add your cheese, meat and s & p to taste. Mix well to incorporate.
Put potato mixture in a buttered baking dish. Sprinkle top with more cheese and bake at 350 until top is brown and edges look crispy.
