Re: Easy and Light Summer Dessert?
First take some berries of your choice, slice them up and add a little sugar and water.. let them sit in the fridge for a day until a nice syrup forms.
Tear up some angel food cake - or sponge cake. and put it into the bottom of a parfait glass or a wine glass. Layer in a little berry mixture, some freshly whipped cream, another layer of cake then berry, then cream. Top with a mint sprig and a couple of fresh berries.
Also - watermelon granitas - watermelon, a little lime juice, some water and some sugar (or simple syrup if you have it handy) - blend. Taste to make sure it's sweet enough. IF for adults - add watermelon vodka. If for kids skip it. Stick it in the freezer. Take it out when it's frozen and break it all up so it's a little like snowcone consistancy. Pile in a glass and add some mint sprigs for decoration.
