Easy Crockpot recipes
I just got one and looking for some easy recipes. I don't eat red meat... mainly chicken, turkey or any vegetables.

you'll LOVE your crockpot! nothing like coming home to dinner already done!
for chicken: i make chicken caccitore. basically just a couple chicken breasts, some peppers, an onion, and a can of crushed tomatoes all cooked together. you can use a spicy pepper ( like cubanelle) or a few drops of tabasco if you like it spicy. the chicken shreds up and it because almost like a stew, so i serve it over rice or pasta...
OR: chunky chicken chili
chicken breasts ( i usually use 2)
a packet chili seasoning mild
2 small cans of diced tomatoes with green chili peppers ( found with the other canned tomatoes)
one small can of tomatoe sauce
2, 15 oz cans of hominy (corn- found in the Goya Aisle)
put everything BUT the hominy in, and bake on low for 8-10 hours. about 15 minutes before you are ready to eat, drain the hominy and add it in to heat through. serve it with tostito chips and shredded cheese! **this is awesome because it makes enough for 2 meals for DH and i... and freezes REALLY well!! so i'll make it and freeze half of it, so we have a meal ready for another night we don't feel like cooking!

get
an onion 2 bottles of your fav rib bbq sauce I used bullseye sweet and sticky rib sauce and ribs (i like country style)
cut onion into rings and put on bottom of slowcooker
I pour some sauce in then putin some ribs then sauce then ribs Make sure the ribs are completely soaking in sauce....sometimes I may use a 3rd bottle of sauce
keep on low 8 hours
DELISH!
I make garlic mashed potatoes with it and some jiffy cornbread

sounds sooo good! how long does the chicken caccitore cook for and you put the chicken in uncooked?

yup- all the chicken goes in uncooked. i usually do the chicken cacciatore for a little less time, like 5 hours.. it doesn't really hurt it to go in for 8, but i think it just tastes a little bit better when it cooks for a little bit less time. have fun!!
