I'm not much of a cook either, so I prepare these: > different types of pasta with either red or white sauce > home made pizza (I use white bread, spaghetti sauce, cheese and ham/spam/pepperoni,etc.) > mashed potato or sweet potato or butternut squash with veggies > macaroni salad > potato salad > baked fries and chicken (diced) > congee/ rice porridge > silken tofu > fried tofu and steamed veggies

Re: EASY meals for 1 yr old toddlers?
How about baked chicken nuggets and Mac and cheese? Just slice a chicken breast into squares dip in oil, dip in bread crumbs and bake for 10 min Soft shell tacos- or without shell? I try and make them with ground turkey meat , black beans tomatoes and avocados
Would your munchkin eat broiled fish? Eggs? Sneak some spinach in the eggs? Soy nut butter and jelly?
Eta: sorry I didn't mean 10 minutes. I don't know how long it really takes but I don't think 10 is right. Prob closer to 20?

Dr. Praeger's has fish sticks, broccoli bites, sweet potato bites, etc. They're quick to throw in the toaster oven. DD also loves the earth's best mini meatballs. Tacos are quick and since DD won't really eat the meat on it's own I'll usually make her a quick quesadilla with some meat in it. If you can roast a chicken over the weekend, that would last you a few days. You can throw the meat in mac and cheese, a quesadilla, on pizza, etc.
Sides are usually rice, pasta with butter, a baked sweet potato. For veggies I usually give her steamed broccoli and carrots or frozen peas or green beans.

Re: EASY meals for 1 yr old toddlers?
frozen turkey meatballs...sounds like us! lol
We also do Annies shells and cheese, chicken nuggets, steamed sweet potatoes.
I cut turkey meatballs up with small egg bow pasta and broccoli with some butter.
Pasta, turkey meatballs, sauce, ricotta cheese is I big hit. I can make all of these ahead and freeze in their little bowls.
Turkey and cheese sandwiches.
Egg bow pasta, frozen peas and carrots, finely chopped rotisserie chicken with a little gravy.
They also love tater tots but they aren't AS healthy so I don't give them often.
I have a hard time finding new stuff and my kids get bored quickly.
ETA, mine haven't grasped the concept of a spoon yet so I'm still somewhat limited.

Re: EASY meals for 1 yr old toddlers?
We rely heavily on the crock pot!
This recipe is DD's FAVORITE. She will seriously eat 2 adult-sized bowls of this for dinner. (I have to spoon feed her the broth, but she'll self feed the chunks). It makes so much that DD can typically eat it for dinner a few nights in a row and I can take some for lunch too!
"Creamy" crockpot chicken and tomato soup (we only use 4 chicken breasts)
We also make chicken tacos with black beans and corn and steak tacos frequently, all in the crock pot and DD devours those as well.
DD also likes veggie burgers.

- Diced Chicken cutlets (make a big batch and use for a few days) - Pasta w. Tomato sauce - Homemade Mac and cheese (freezes well) - Black bean and cheese quesadilla - Chicken noodle soup with broth drained out - Hard boiled eggs or omelette - Crockpot pulled pork - Turkey burgers - English muffin pizzas
I always serve lunch and dinner with a mixed veggie--just steam 2-3 servings at a time so you don't have to make them every day.
