Easy Warm Lentil Salad
I'm a vegetarian, and a few months ago I went to a French Restaurant and the only thing I could eat was a lentil salad. I was a little bummed... till the food came and I tasted it and it was AMAZING. I wanted to make it for myself at home, but lentils are a pain in the you-know-what because of all the soaking, etc. (I never cook anything that isn't ready to eat in 30 min. or less - I never think to start cooking BEFORE i'm actually hungry).
So yesterday, we were at Trader Joe's and they were selling packaged, pre-steamed, ready-to-eat lentils. YES! So I...
-Sliced half an onion into thin strips -Sliced 3 carrots into small round pieces -Mashed a garlic clove -Sauteed the onion/carrot/garlic mixture in a T of olive oil, added some thyme, some celery salt, and a little salt in a Sautee pan until the onions were clear and the carrots were soft -Threw in the lentils and covered the pan, lowered the heat all the way down, and left it for about 10 minutes. -Mixed romaine lettuce with raspberry vinaigrette in a bowl - Put the lettuce on a dinner plate, and scooped the lentil mixture on top of it. -Served it with soup (Trader Joe's Sweet Potato Bisque) and a slice of big crust cibatta bread.
MMMMM... so healthy and fast and easy and delicious! We'd had a big lunch and this was our whole dinner, but it would make a great side dish too.
Just thought I'd share!

this sounds sooooo good!
But just to let you know...you do not have to soak lentils like other beans. I make 30 mins soups all the time with lentils and not soaking for me!!

But just to let you know...you do not have to soak lentils like other beans. I make 30 mins soups all the time with lentils and not soaking for me!!
Ooooh, I didn't know that. I love lentils but almost never cook them because I thought it would take too long. Thanks for the info!

There are certain ones thta need to be soaked, but I think red and yellow don't have to be.

I didn't think you had to, either, until one night, I made dahl. I didn't have red lentils, so I used brown ones. 2 hours later, they were still crunchy. That's when I looked and saw that brown ones needed some soaking or longer cooking. Oh well. Hence, I stocked up on red lentils. Much easier.
