I did some of these things for a brunch I did a few months ago, so yummy:
> Fruit salad > Crepes and mini pancakes (cheese, syrup, jams to add on) > I took a bageuette, smeared each one with smushed avocado, added a tomato on top and a small piece of a boiled egg. Everyone loved it > Spinach and feta cheese fritatta > Baked potatoes - I used pioneer woman's breakfast potatoes recipe. SO GOOD.

muffins- chocolate chip or blueberry or cranberry
there is this dish where it is basically eggs and potatoes layered together. its a spanish dish maybe u can google it.

pasta salads

Barefoot Contessa's Baked Blintzes with Blueberries. Instead of making individual blintzes, you just make them in one baking dish. There are quite a few steps, but it can be made in advance!
Mini frittatas made in muffin tins?
Quiche?
Baked oatmeal - I like the skinnytaste recipe for Baked Oatmeal with Bananas and Blueberries, but you can sub any fruit or any flavors.
Williams-Sonoma has great muffin recipes (both sweet and savory... savory ones include spinach Florentine, and tomato with goat cheese). I also love their recipe for raspberry crumb cake.

easy yet different brunch ideas...
If you have a waffle maker, mix up the batter and everyone can mamke their own waffles- have a couple of different mix ins and toppings (choco chips, nuts, whipped cream, fruit, etc.)

I'm doing a big bunch tomorrow at my house for my DS's 1st bday. We're having:
Cowboy Quiche (Pioneer Woman) Breakfast Potatoes (Pioneer Woman) Bacon Scrambled Eggs Mini Muffins Ass't pastries Small Individual boxes of cereal French Toast Casserole Waffle Station (everyone can make their own fresh waffle) Bagels and Cream Cheese Fruit Salad with Honey Lime Dressing Veggies and Dip Cheese and Crackers Honey Lemon Pasta Salad Spiral Ham
